Ingredients

1 Peppers, sweet, red, raw, sliced in thin strips
1 quarter medium onion, sliced thin
1 cup Mushrooms, sliced
3 tbsp Trader Joe's Light Mexican Blend Shredded Cheese
Trader Joe's Blue Corn Tortillas, 6 tortilla, medium (approx 6" dia)
6 Tbsp salsa (Trader Joe's Serrano)
1 can organic black beans
Directions
Slice bell pepper, onion and mushrooms. Saute until tender in nonstick spray. Mix in rinsed black beans to heat through.
Sprinkle shredded cheese onto center of tortillas (1/2 tbsp each). Spoon veggie-bean mixture on top of cheese. Top with 1 tablespoon salsa.
Makes 3 servings: 2 filled tortillas per serving
