Ingredients

    1 cup of flour
    1/2 teaspoon of salt
    3 eggs, beaten
    1 1/2 cups of milk

Directions

Heat a small frypan on medium heat. Mix all ingredients together. Coat frypan with a thin layer of Crisco shortening. Pour a thin layer of pancake mix into frypan and move the pan around to coat the bottom. When the sides of the pancake start to curl up, flip the pancake and cook for about 30 seconds. The pancake is done when both sides are lightly browned. Serve with syrup, jelly, etc. Makes approximately 8 pancakes. Serves 4.
