Ingredients

    1 Package Southwestern Potatoes
    1 Package Smoked Sausage
    6 eggs
    .5 - 1 C cheese cubes

Directions

Spray pan with EVO
place thawed potatoes in skillet, and cook throughly over medium heat.
Meanwhile slice sausage into bite size slices then add to the potatoes and continue cooking. Once the potatoes are just about done, beat 6 eggs with about 1/4 c water and stir into the potato and sausage mixture. Cook until the eggs are just set, and then add the cheese and continue cooking until the cheese is melted and everything is well blended together
Makes 4 1 cup servings
