Ingredients

    1/4 c. earth balance plus 2 tbsp oil
    1/4 cup Agave Nectar
    2 eggs
    1 c. low fat buttermilk (milk plus 1 tbsp lemon juice)
    1/2 teaspoon baking soda
    1 cup cornmeal
    1 cup all-purpose flour (wheat)
    1/2 teaspoon salt

Directions

Preheat oven to 375 degrees F. Grease an 8x8 inch square pan. Melt butter and stir in sugar. Add eggs and beat until well blended. Mix in buttermilk. Stir in cornmeal, flour, baking soda, and salt until well blended and few lumps remain. Pour batter into the prepared pan. Bake in the preheated oven for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.
