    * Granulated Sugar, 1 cup
    * Sugar In The Raw, 1 cup
    * Egg, fresh, 3 large
    * Olive Oil, .75 cup
    * Vanilla Extract, 1 tsp
    * Salt, 1 tsp
    * Baking Soda, 1 tsp
    * Cinnamon, ground, 3 tsp
    * Zucchini, 1 cup, grated
    * Banana, fresh, .5 cup, mashed
    * Sweet potato, .5 cup, grated
    * Flaxseed Meal, 1 cup
    * *Wheat flour, white, all-purpose, unenriched, 2 cup
    * Walnuts, 1 cup, chopped
    * *Dried Cherries, 1 cup


(1) Cream together eggs, sugar, vanilla and oil in a large bowl. Add grated veggies and fruits.
(2) In a separate bowl, mix together dry ingredients. Gradually stir into the wet mixture to create a batter.
(3) Add nuts and dried fruit and combine lightly.
(4) Divide the batter between two greased, floured loaf pans.
(5) Bake at 350 for one hour, or until a knife comes out clean and top is golden brown.
