This is a cherished recipe that my mother (Ms.Mary) makes for any and all occassions.........this recipe is also one of my biggest catering dishes.......

Ingredients

    12 ozs Tyson Tenderloin Boneless Chicken Breast (I usually just use fresh chicken breast, but this is what's on hand)

    1 bottle of Miller Chill Chelada Beer (however, you can use basically any beer)

    1 ex-large egg, boiled and chopped

    1 oz each of Sweet Red & Yellow bell peppers, chopped fine

    1 tbsp sweet relish

    1/4 cup of Miracle Whip (i don't substitute for fat free, but you can)

    1/8 cup of Kraft May w/olive oil

    Seasonings (optional) (onion/garlic powder, Morton's seasoned salt, McCormick's Mesquite seasoning) paprika


Directions

Wash and clean chicken breast

In medium sauce pan add chicken and season well, add beer....cover and boil until done...remove from heat and cool 20-25 minutes.....after cooling, chop

In medium bowl, add chopped peppers, celery, and relish, along with chicken stir well.....you may add more seasons if you care to........then add Miracle Whip and Mayo....mix well..

(With the Miracle Whip and Mayo add until you get the desired consistency that you like.....you may want to add more or less....it's your choice)

After mixing well, sprinkle with paprika and refrigerate for a few hours or like I do, eat while still on the warm side.

This can make 2 servings, however, this recipe can be made to serve up to 100 or more
