Introduction

I pulled this down from the food network website when I was looking for a recipe for swiss steak. My mom used to fix this all the time. Swiss Steak is prepared with a round steak that has been run through the cuber at the butcher's. Cube Steak is also another "cut" you see at the market. Note: Nutritional count includes another 1/2 onion and another 3/4s of a bell pepper that I needed to use up. We like the extra veggies. Ingredients

    1 round steak approximately 1 1/2 pounds
    1 teaspoon garlic powder
    Salt and Pepper
All-Purpose Flour for dusting (noted 1/4 cup for nutrition)
1/3 cup vegetable oil (noted canola for nutirtion)
    2 cloves garlic, crushed
    1 (14 1/2 ounces) can diced tomatoes
1 medium onion, cut into strips
1 medium bell pepper, cut into strips

Directions

Cut steak into serving size pieces. Season to taste, with garlic powder and salt and pepper. Dust meat with flour. In heavey skillet brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic tomatoes, onion, bell pepper and one tomato-can measure of water. Pour over steak and simmer onver low heat until meat is tender, about 1 and 1/2 hours, adding water if necessary. (Hint: Cook this in a slow cooker, according to manufacturer's instructions, on low for a most fabulous dinner. Low heat on a slow cooker is about 200 degrees F and high heat is about 300 degrees F.

Makes 6 servings of 4 oz uncooked weight of meat, or 8 servings of 3 oz uncooked weight of meat.
