I found a copycat recipe for Olive Garden's Zuppa Toscana and substituted several ingredients for healthier ingredients to make my own variation of this fabulous soup. I found a copycat recipe for Olive Garden's Zuppa Toscana and substituted several ingredients for healthier ingredients to make my own variation of this fabulous soup.
Number of Servings: 1

Ingredients

    2 lbs extra lean ground turkey
    2 lg baking potatoes
    1 lg onion, chopped
    3 to 4 pieces turkey bacon, cut into strips
    2 cloves garlic, minced
    2 cups kale greens, chopped
    64 oz chicken broth
    32 oz vegetable broth
    1 to 1.5 cups fat free half and half
    Oregano to taste
    Basil to taste
    Sea Salt to taste
    Black pepper to taste
    Garlic powder to taste (optional)

Directions

Brown ground turkey with onions, turkey bacon, black pepper, sea salt, basil, oregano, garlic and garlic powder.
Pour chicken broth and vegetable broth over mixture, add cut potatoes and cook until potatoes are completely cooked.
Add the kale greens and the half and half and cook for another 5 to 10 minutes.
Enjoy!

    Very Good
    Sounds great. I know I LOVE the O.G. version so I'll probably go head over heels for the healthier version. Now if we can only get a healthier/ low-carb version of their breadsticks. - 10/3/07
