Ingredients

    Artichokes canned in water- 1 can drained & crushed.
    1 cup frozen spinach, defrosted and water pressed out
    2 tbsp of lite mayo
    1/3 cup shredded pizza cheese
    1/4 cup italian bread crumbs
    1 tbsp of lemon juice
    2 tsp of diced garlic
    dash of hot sauce, pepper

Directions

Use a pasty blender to crush artichokes. Add pressed spinach, garlic, mayo, cheese and breadcrumbs and mix well.
Use a mellon baller (or a 1 tablespoon scoop) . Use a mini muffin pan to bake individual balls/cups. Sprinkle parmesan and romano cheese on top of each cup.
Bake at 350 degrees 10 - 20 minutes or til brown.
