Ingredients

    Cake Mix, Duncan Hines Moist Deluxe Dark Chocolate Fudge, 1/12 of mix only, 6 serving (or any flavor of cake mix- half the box)
    Pumpkin, canned, without salt, 1 cup (half a can)
    *Active Lifestyle Instant Maple Brown Sugar & Pecan Oatmeal, 2 serving
    egg white, fresh, 1 large

    Use a full box of cake mix and the whole can of pumpkin and use regular size muffins = 18 muffins. Double the nutritional value.

Directions

Whisk egg white and add to pumpkin.
Add dry ingredients and mix with wet ingredients.
Add sweetner, cinnamon, vanilla and amaretto flavoring to taste.
Use a 1 tablespoon scoop or mellon baller to drop in mini muffin tins. Bake at 350 degrees for 20 minutes or until a toothpick comes out clean.
