Ingredients

    4 oz boneless skinless chicken breasts
    2 tablespoons honey
    28 g Wheat Thins, Reduced Fat

    Seasonings to taste, I use:
    1/2 tsp Cayenne Pepper
    1/4 tsp Black Pepper
    1/4 tsp garlic salt

Directions

Crush crackers, place into plastic bag, set aside.
Mix honey and seasonings.
Drizzle honey/seasoning mix over chicken, enough to coat. Be careful not to cross contaminate the extra honey/seasoning mix with the uncooked chicken.

Take honey-coated chicken and place in crushed cracker bag. Press crackers to chicken. Bake chicken at 350 degrees for 18-20 minutes on a well-greased (cooking spray!) cookie sheet.

When finished, serve with remaining seasoned honey for sauce.
