These soft tacos are low in calories and fat! They're easy and quick to prepare with just a few simple ingredients. Pair them up with a nice salad and you have a meal that will easily fit into your nutrition numbers!

Number of Servings: 10

Ingredients

    Chicken Breast, boneless/skinless-sliced into thin strips (20 oz)
    Granny Smith Apples-peeled and cored (2)
    Sweet Onion-sliced (1/2 cup)
    Garlic (2 cloves)
    Salt (1/2 tsp) optional*
    Pepper (1/2 tsp)
    Nutmeg (1/2 tsp)

    Tortillas (10) Your Choice (not calculated into nutrition count)

Directions

Thinly slice onion and apple...set aside.

Spray large nonstick skillet with cooking spray and heat to medium-high. Add chicken to pan, saute about 10 minutes or until golden. Remove chicken from pan, drain, and keep warm.

Spray pan again with cooking spray and heat to medium. Add onion and apples to pan, saute about 6 minutes or until tender, stirring frequently. Press garlic into apple mixture and saute another 30 seconds.

Return chicken to pan and add salt, pepper and nutmeg...combining well with apple mixture. Simmer for about 5 minutes until heated thoroughly, stirring frequently.

Heat tortillas of choice (not calculated into nutrition count) and add 1/2 cup mixture to each. Serve immediately with toppings of choice.
