Ingredients

    675g Chicken breast no skin
    1tbsp veg oil
    2 onions, roughly chopped
    3 garlic cloves, chopped
    1 red pepper, 1 green pepper, roughly chopped
    1 can, 800g, chopped tomatoes
    1 litre chicken stock
    1 tsp thyme
    1 tsp oregano
    1/4 tsp cayenne
    450g medium prawns
    450g long grain rice
    20g chopped fresh parsley

Directions

Heat oil in large non-stick pan. Add chicken and brown for 3 minutes. Add onions, garlic, fry for 3 minutes.
Stir in peppers, tomatoes. Add stock and herbs/spices.
Stir in rice, cover and reduce heat. Simmer for 25 minutes, until most of liquid absorbed.
Add cooked prawns for an additional 5 minutes.
Stir in parsley and serve.
