    1/4 tsp salt
    1/4 tsp sugar
    1/4 tsp pepper
    1 clove garlic, minced
    1 tbsp extra virgin olive oil
    1 tbsp balsamic vinegar
    1 tbsp lemon juice

    1 cucumber, peeled, seeded and diced
    3 tomatoes, seeded and chopped
    5 oz. green beans, cut in 1" lengths and lightly steamed until crisp-tender.


Whisk together dressing ingredients until well blended.
Toss vegetables in a large bowl.
Pour dressing over vegetables and toss to blend.
Chill before serving.

  • I didn't seed nor peel the cukes or tomatoes. Still looks good, looking forward to tasting it tomorrow. Will update. - 9/20/10

  • This was so great! My husband tasted it and said "wow - you should make this for company!" We devoured the whole thing. One tip would be to make sure that you do take out the seeds and liquid out of the tomato and cucumber. It makes it a bit watery with them in. - 8/8/10
