Ingredients

    -1 lb. lean ground turkey
    -1/2 cup frozen corn kernels
    -2 slices fat-free cheddar cheese
    -1/4 cup chopped green bell peppers
    -1/4 cup chopped onions
    -1/2 cup salsa
    -1/2 packet of taco seasoning mix, dry (about 2 tbsp)

Directions

Preheat oven to 375 degrees.
Spray a skillet with olive oil cooking spray. Cook peppers and onions for three minutes over medium high heat.
In a large bowl, combine onions and peppers with turkey, corn, and taco seasoning.
Spray a 9"x5" loaf pan with the nonstick spray. Spread half of the mixture evenly into the bottom the loaf pan.
Layer the two slices of cheddar on top of the mixture. Top cheddar with remaining turkey mixture.
Pour the salsa over the loaf. Cook in oven 45 minutes.
*Optional: sometimes, after thirty minutes, I will take the loaf out, sprinkle 1/2 cup shredded fat-free cheddar on top and then place back in the oven for the remaining 15.

Makes 6 servings.
