Introduction

I have made this chili for years, from a friend at work. I have made changes over time and have finally written down what exactly I put in for once, and lowered the sodium. The amount of seasonings were estimated, I just add them to our taste. I have made this chili for years, from a friend at work. I have made changes over time and have finally written down what exactly I put in for once, and lowered the sodium. The amount of seasonings were estimated, I just add them to our taste.

Ingredients

    2 1/2 C - Cooked, shredded Chicken

    8 C - Low Sodium Chicken Broth (recipe I found on SparkRecipes.com)

    2 C - Great Northern Beans, soaked, drained and cooked according to directions on package.

    1.5 T - Exra Virgin Olive Oil

    1 - Pablano Pepper, seeded and chopped

    1 - Anaheim Pepper, peeled, seeded and chopped

    2 - Jalepeno Peppers, one seeded and chopped, one not seeded and chopped (this will give more heat to the chili)

    2 C - Onion, chopped

    6 - Cloves Garlic, minced

    3 T - Fresh Cilantro, chopped

    1/2 t - Salt

    Black Pepper to taste

    1 T - Oregano

    1 t - Cumin

    1 T - Mrs. Dash Southwest Chipotle Seasoning

    1/4 t - Cayenne Pepper (optional)

    Hot Sauce to taste (optional)

Directions

Heat olive oil in large pot, add onions and garlic and saute until onions are transparent.

Add all peppers and seasonings, continue saute until peppers become tender.

Add Chicken Stock and Great Northern Beans.

Bring to boil and simmer at least 20 minutes.

Add Chicken and Cilantro, continue to simmer for another 40 minutes or so.

This can also be put into crock pot to cook once all ingredients are brought to boil.

Serve with shredded cheese, sour cream and tortilla chips if desired, (these are not added into nutritional info for recipe).

This makes about 10 - 1 1/2 Cup servings.
