Ingredients

    1 cup Carrots
    1.25 cup onions
    2 cup lentils
    1 tbsp green curry paste
    2 tbsp fish oil
    1.5 cups coconut milk
    1 cup frozen peas
    1 package frozen spinach
    1 cup green bell pepper

Directions

cook lentils, saute vegetables, add milk and curry and simmer 35 min.

Makes 10 - 2/3 cup servings
