Ingredients

4 Cups Sliced Zucchini (thin, leave skin on)
1/2 Cup Onions, chopped (or to taste)
1/2 Cup butter (can use margarine or substitute)
2 eggs, beaten
1 Cup Shredded Mozzarella Cheese, part skim(can use 2% or FF)
2 pkgs. Pillsbury Crescent Rolls (nutritional info for Reduced Fat)
Basil, oregano or Italian Seasoning
Garlic Powder
Yellow Mustard (to your liking)
Directions
Cut zucchini and onions,
Melt butter in large saute pan, add zucchini, onions, and seasonings (basil/garlic powder)
Cook until tender ( I prefer them almost translucent)
Meanwhile - place crescent rolls on large cookie sheet - flatten/press down to make a crust (will have 2-3 leftover)
Spread yellow mustard onto crescent rolls (I just pour a thin layer over entire crust)
In a large bowl beat eggs and add mozzarella cheese. When vegetables are done, add them to egg mixture and stir. Pour entire mix onto crescent crust, spread evenly.
Place in 375 degree oven for 18-20 minutes or until brown. Great warm or cold - reheat in oven or toaster oven
