Ingredients

    3/4 steel cut oats
    1 cup 1% milk

    Combine and let soak while preparing the remainder of the cake.

    Combine in a large bowl:
    2 eggs
    3/4 unsweetened a pplesauce
    1/4 cup canola oil
    1 tablespoon vanilla extract

    Add, mixing well,
    1-1/2 cup all purpose flour
    1/2 tsp salt
    1 tablespoon baking powder

    Add oats and milk mixture. Beat on medium for approximately two minutes.

    Pour into greased/floured 9 x 13 cake pan. Bake at 350 degrees for 30 minutes or until toothpick inserted comes out clean.
