Introduction

Low sodium and low in sugar. I made this using Truvia sweetener as I don't like splenda. More flour may be added to make them more firm, mine turned out a little flimsy with only 1.5 cups. Ingredients

    1/2 cup Smart Balance buttery spread
    1/4 cup egg beaters liqiud (1 egg)
    1 cup packed brown sugar
    3 tbsp truvia sweetener
    2 tsp vanilla extract
    1 mashed banana
    3 tbsp peanut butter
    1/2 tsp baking soda
    1/2 tsp baking powder
    1 1/2 cups flour
    1/2 cup oatmeal
    1/2 cup chocolate chips

Directions

Serving size = 2 cookies approx 2 inch
Recipe makes about 72 cookies

In a large bowl cream together butter and sugars. Add egg liquid and mix thoroughly. Add mashed banana, vanilla, and peanut butter.
In a separate bowl mix together dry ingredients. Gradually add dry ingredients to wet mixture. Mix completely between additions. Mix in chocolate chips. Refrigerate 1 hour.

Preheat oven to 350 degrees F. Spoon teaspoons of dough onto cookie sheet about 2 inches apart. These spread like regular chocolate chip cookies. Bake for 8-11 minutes, or until golden. Allow to cool on cookie sheet before transferring to wire cooling rack.
