1 lb lean ground chicken
4 large onions
4 ribs celery
2 red peppers
1 jalapeno
4 cloves garlic
3 cans tomatoes
1 tsp cinnamon
3 tbsp chili powder
1 tbsp cocoa powder
1 tbsp dried red chili peppers
1 can each Red Kidney Beans, Black Beans, Pinto Beans
1 cup frozen corn
Directions
boil chicken in large pot boiling water. drain. return to pot. add onions, celery and peppers. Stir fry (do not add any oil) until onions are soft. add garlic, tomatoes, spices. bring to a simmer. Add beans and corn. Return to a simmer. Add tomato paste if required to thicken. Cook 30 minutes.
