Ingredients

    1/2 cup brown rice
    1 boneless, skinless chicken breast, cubed
    1 tbsp olive oil
    1 2/3 cup assorted veggies, diced
    1 tbsp margarine
    1 1/2 tsp garlic powder

Directions

Start cooking rice as per package instructions. This usually takes about 20 minutes.

In a frying pan, add olive oil and chicken breast chunks. Cook over medium-high heat until done (Approx 9-10 minutes). Set aside.

Start a medium saucepan with a steamer basket to boil while you dice your chosen veggies. Personally, I use about half a cup of broccoli, half a cup of cauliflower, and a third of a cup of both carrots and rainbow peppers. The water should be boiling when you're done this. Add veggies and place loose fitting lid on pot. Steam for about 6-7 minutes.

When rice is done, add margarine and garlic powder. I use about 1.5 tsp, but you can use more or less depending on your personal preference. Stir until well blended.

Add veggies and chicken to rice. Stir together and enjoy.
This recipe also works well with pasta in place of the rice.

Makes 2 fair sized servings, or 3 smaller ones.
