Ingredients

1 cup quinoa
1/2 cup diced cucumbers
1/2 cup diced carrots
1/2 cup diced bell pepper of your choice(except green)
1 tbsp chopped cilantro
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
The juice of one lemon(no seeds)
1/4 cup sliced almonds(roasted)
Directions
cook or soak quinoa until transparent
Chop all veggies and mix together
squeeze lemon, and drizzle oil and balsamic on top
toast almonds and top right before serving
