Introduction

This is a delicious bread, but doesn't have the gritty taste of cornbread. You can achieve that by using coarse meal, whole wheat flour, and ground flax in larger amounts. Ingredients

    Corn meal 1 cup
    1 cup mix of white & whole wheat flour
    Salt, 3/4 tsp
    Honey, 1 tbsp
    Baking Powder 1 tsp
    Baking soda 1/2 tsp
    Vegetable oil, 2 tbsp

    "buttermilk" 1 1/2 cup milk with 1 1/2 tbsp white vinegar

Directions

Combine the milk & vinegar and set aside to turn into "buttermilk". Meanwhile, mix the cornmeal, flour mix, baking soda/powder, salt together. Then add the buttermilk, honey and oil.

Pour into an iron skillet (or a greased pan) and sprinkle with flax seed on top. Bake at 400F for 25 minutes, or until a fork comes out clean from the center.

Immediately dunk into a delicious hot chili :)
