Ingredients

    2 cups vegetable broth
    2 cups kimchi
    4 sliced new potatoes
    1 sliced zucchini
    2 tsp soy sauce
    1 tsp mirin or shiaoxing
    2 chopped scallions
    15 grams butter
    1 block extra firm tofu
    1 small onion
    4 cloves garlic
    2 tbsp gochujang
    2 tsp doen jang or white miso

Directions

1. Soften onions in veggie broth.
2. Add kimchi. garlic, and all wet ingredients. Bring to a boil.
3. Add vegetables and tofu.
4. Simmer for ~20 minutes.
5. Add scallions and butter, then serve immediately with a side of rice.
