Introduction

Ingredients

    2-3 stalks of Green Onion
    3 Large Eggs
    1 cup of Egg Whites
    1/4 cup of chopped fresh dill
    3 cups of fresh spinach
    1 TBS Olive Oil
    1 Tub of Reduced Fat Feta Cheese, Crumbled

Directions

Put a pot of water on to boil.
While waiting for water to boil -
Crack the 3 eggs into a medium size bowl, add the 1 cup of egg whites, then add chopped dill, sliced scallions, feta cheese, and salt and pepper and beat with fork.
Get a small bowl and fill with ice water and place by stove.
When water is boiling add spinach until it is wilted (just a minute) then remove spinach and place in the iced water.
Squeeze the water out of the spinach and add to the egg mixture. Mix again with a fork.
Heat non-stick pan with 1 TBS of Olive Oil.
Heat Oven to Broil on 450*
Pour Egg Mixture into pan and cook until bottom is golden brown, lifting sides occasionally with spatula to let egg drop to bottom to cook. Then place pan in the oven for 5 minutes to cook and brown the top. Slice into 4ths and serve.
