Ingredients

    2 large parsnips (450g)
    potato (200g)
    1 medium onion
    1 tbsp curry powder (or to taste)
    1 oxo chicken cube

Directions

roughly chop the onion, gently soften the onion in a tbs of water over a medium heat for 5 minutes.
chop parsnips and potatoes in 5cm pieces
add curry powder, parsnips and potatoes to the onions.
stir to coat in the curry powder add 1 chicken oxo cube crumbled and 1 litre of hot water, bring to the boil then simmer for 15 minutes or until veg is tender.
leave to cool slightly then blend smooth adding more water if needed.

    Incredible!
    Loved it! Used Tesco's medium curry and vegetable stock to make it vegetarian. Really earthy soup. Although the amount of curry may seem a lot, the sweet flavour of the parsnips still comes through. Will make again. - 2/3/14
