Ingredients

    Boneless Sirloin Tip Pork Roast, 24 oz, sliced into pieces
    Hoisin Sauce, 3 tbsp
    Seasoned Rice Vinegar, 1 tbsp
    Soy sauce, low sodium, 1 tbsp
    Sesame Oil, 1 1tsp
    Ginger, ground, .5 tsp
    Pepper, black, .5 tsp
    Chili Garlic Sauce, Sriracha, 1 tsp
    Carrots, raw, 2 large, sliced
    Broccoli, fresh, 1 bunch chopped
    Cornstarch, 1 tbsp
    Barley, pearled, cooked, 6 cup
    Canola Oil, 1 tbsp

Directions



Put barley in rice cooker/pot and boil according to package directions

Slice/Dice vegetables and pork, set aside

Mix, sriracha, sesame oil, hoisin, vinegar, and soy sauce together and combine with pork in a bowl

Heat 1 tbs canola oil in a cast iron pan and bring to a med-high heat

Add carrots and cook for 2-3 minutes, then add broccoli and saute for 3-5 minutes

Add pork to pan and stir well, then add a slurry of the cornstarch shaken with 1/4 cup of water and cook until pork is cooked through (may need to add water)

Serve over barley (or rice if preferred)
