Introduction
Gluten Free, Sugar Free, Low Carb Cookie adaptation. Gluten Free, Sugar Free, Low Carb Cookie adaptation.Number of Servings: 26
Ingredients

13 oz Honeyville Grain Blanched Almond Flour
1/2 cup Erythritol Sweetener
1/2 tsp salt
1/2 tsp baking soda
1 egg
1 stick salted butter
1 Tbls vanilla
1/2 cup Hershey's Sugar Free Chocolate Chips
1/8 cup Water
Directions
Soften Butter, mix in egg, water, vanilla. In mixing bowl, whisk together almond flour, salt, baking soda, and erythritol. Add wet ingredients to dry, then stir in chocolate chips. Scoop with Pampered Chef small scoop onto parchment lined baking sheets. Should make @ 26 cookies. Bake at 350* oven for 10 mins. Turn on convection and bake for 2 more minutes, after switching rack positions of baking sheets. Enjoy.

I used stevia and Carob chips instead, because thats what I had at the time I made them. They were very tasty. They didn't spread out much so when I made second batch I patted down top just alittle. They had a good texture and taste.The butter flavored them well.I will try with s/f chips next time. - 8/29/12
