Introduction

This is the SparkPeople recipe modified to make it more chili-like with a tomato base and some chili flavor. Good with a little cheese and some guac or avocado. Ingredients

    1 medium onion, chopped
    4 cloves of garlic minced
    1 TBS olive oil
    2 medium carrots, finely chopped
    2 cans black beans, drained
    1 TBS chili powder
    4 cups vegetable broth
    1 red pepper, diced
    1 6 oz. can tomato paste

Directions

1. Saute the onions and garlic in a large sauce pan
2. Add everything else
3. Bring to a boil, then cook on medium heat for about 20 minutes until carrots are tender.

Serves 6.
