Introduction

This was an improvisation that turned out to be delicious. I used Japanese sweet potatoes, orange yams, and carrots. I diced up a small onion and several celery stalks and simmered the veggies in the broth and spices for over an hour on low. The amounts are approximate - add more or less depending on your taste. This recipe can be altered as you like. I found the stew was slightly sweet from the yams, carrots, and sweet potatoes, and with the spiciness of the cayenne, giner, cinnamon, and curry, this was very satisfying. Ingredients

    Sweet Potatoes or Yams
    Carrots
    One Small Onion
    Several Celery Stalks
    Small Handful Parsley
    Cinnamon Powder
    Fresh Ginger Root
    Curry Powder
    Cayenne Pepper
    Tamari Soy Sauce
    Canned Coconut Milk (or Heavy Cream)
    Butter (or Coconut or Olive Oil)
    Chicken Broth (Substitute Vegetable Broth)

Directions

Roughly chop vegetable and parsley. Simmer all ingredients on low to medium heat for one hour. Check consistency of yams and carrots - give longer if needed - when you can cut them with a spoon, they're done. Spice according to your liking and you can variate the recipe by adding other vegetables, or a tsp or two of maple syrup or honey, to give a spicy-sweet taste.
