Ingredients

Ground Beef, Lean (93%) - made into patties
Small Onion - chopped
Package of Frozen Veggies
Medium Potato - Thinly Sliced
2 cloves of garlic - minced or pressed
Copped tomatoes - fresh or canned
salt & pepper to taste
non-stick spray

Directions
1. Pre-heat oven to 400 degrees
2. Make patties out of lean ground beef and set aside. (S&P to taste)
3. Tear off 2 large pieces of foil - lay out flat
4. Spray non-stick spray on foil
5. Place 1/2 of the sliced potatoes on each piece of foil
6. Add 1/2 of the frozen veggies to each piece of foil
7. Add 1/2 of the tomatoes, onions and garlic to each piece of foil
8. Place 1 beef patty on top of veggies on each foil piece
9. Add salt and pepper to taste
10. fold in all sides of foil making a pocket for the food.
11. Make sure to secure all side including the top of the foil to ensure you don't lose any of the juice and to hold in the steam for faster cooking.
12. Place packets on cookie sheet for easy removeal from oven.
13. Bake for 20 minutes and check progress. When veggies are tender and beef is cooked all the way through remove and let sit for a few minutes.
Some like to add cheese to this dish...feel free but you will have to add it to the nutrition tracker! I hope everyone enjoys this as much as we do!
