Ingredients

    1 can flaked light tuna, drained
    0.5 tbsp chipotle chili powder (optional)
    2.5 cups brown instant rice, cooked
    1 can peaches and cream corn, drained
    1 can low-sodium cream of celery soup
    0.5 cup low-fat cheese (I used Kraft Tex Mex light)
    2.5 tbsp hot sauce (optional)



Directions

Flake tuna into large bowl. Add chipotle powder. Add half of cheese, and rest of ingredients and mix. Transfer to small casserole dish. Sprinkle with remaining cheese. Bake at 375 for 30 minutes, or until cheese is brown and casserole is heated through.

Makes 4 - 1 cup servings.
