Ingredients

    cooking spray
    2 oz whole dried apricots
    3/4 cup skim milk
    2 cups whole wheat flour
    2 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    1/2 tsp nutmeg
    1/4 cup unsalted butter, cold
    1/4 cup sugar
    2 oz raisins
    1 egg, beaten

Directions

Chop apricots into pieces and soak them in the milk for 4 hrs. Place the flour, baking powder and soda, salt, and nutmeg in a bowl and cut in butter. Add sugar and raisins. Make a well in the center and pour in the beaten egg and milk with apricots. Mix well to make a soft dough. Place dough in a 1-lb loaf pan sprayed with cooking spray. Bake 30 minutes or until your toothpick comes out clean. Cool 5 minutes in pan before turning out onto a wire rack to cool completely. Yield- one 1-lb loaf, 16 slices (serving size- 1 slice)
