Ingredients

1 tablespoons canola oil
2 large onions, sliced (about 4 cups)
1/2 tablespoon brown sugar
1/2 cup reduced-sodium beef broth
1 tablespoon balsamic vinegar glaze
1/2 teaspoon salt, divided
1/4 teaspoon freshly ground pepper
4 Filet Mignon totalling 1 lb (about 1 inch thick)
100g sliced cambozola cheese
Directions
Number of Servings: 4
1. Heat oil in a pan. Add onions, brown sugar and cook until the onions are very soft. Be sure to stir constantly. Add beef broth, vinegar and cook over medium heat until the broth is almost gone. Put in a bowl.
2. Salt and Pepper steak on both sides. Put on grill and cook 3-5 minutes. Turn over, and cover with cheese. Put lid or foil over steaks and cook until desired doneness (3-5 more minutes for medium rare).
3. Transfer to plate and top with caramelized onions.
