Ingredients:
Goya, White Cargamanto Beans, dry, 1 lb package; 13 servings (1/4 cup dry ) per package
Plantains, 1 medium
Kroger Tomato Sauce No Salt Added, 1 cup
Goya Sazon Seasoning 1 packet
Olive Oil, 1 tbsp
Salt, optional
Directions
Soak beans overnight.
Sort and wash soaked beans
Place in a crockpot and cover with water.
Set crockpot to cook on high for 4 hours or 6 to 8 hours on low
Add peeled and halved plantain and cook on high (or low) for 1 (or 2) hours.
Remove plantain and liquify in 1 cup of the broth from the crockpot.
Return liquified plantain to the crockpot and add salt to taste.
Allow beans to cook in the crockpot for the the remaining time.
Separately heat oil, tomato sauce, and sazon packet and add to beans before serving.
Serve over cooked rice
