Ingredients

    * Egg, fresh, 6 large
    * Zucchini, 2 cup, sliced
    * Onions, 1 medium diced finely
    * Olive Oil, 3 tbsp
    * Pork Sausage, 1 link (approx 4oz)
    * Salt
    *Pepper
    Beat eggs in a large bowl with pepper and a pinch of salt. Sautee sausage in a nonstick pan. Add cooked sausage to eggs. Sautee thin rounds of zucchini on medium high with a dash of salt and a very small bit of oil, if neccesary, in the same pan and add to eggs when well browned. Sautee minced onion on medium with one tablespoon oil and a dash of salt until golden and soft and add to egg mixture. In the same pan (now at medium temperature after sauteeing the onions) heat one tablespoon oliveoil. Pour the egg mixture, now containing all ingredients into the pan. Cook until a little more than half set. Using a plate, flip the mixture over and cook for another three minutes if youlike it runny and five if you like it set.
    slice into three portions and serve.
