Introduction

Ingredients

    Iceberg Lettuce (salad), chopped
    1 Can Yellow Sweet Corn
    1 Can Beans, black
    1 100 calorie packet of Guacamole - Wholly Guacamole
    2 Chicken Breast
    Salsa
    1 Yellow Onion chopped or sliced
    1 Yellow bell peppers chopped or sliced
    1/2 cup Colby and Monterey Jack Cheese shredded
    1 packet Old El Paso Fajita Seasoning Mix
    Kraft Ranch Salad Dressing

Directions

1. slice or chop the Onions and pepper and place in a non-stick skillet on a low heat to slowly sweat and soften.
2. season the thawed chicken breast with the seasoning
3. grill the chicken breast
4. place lettuce, corn, black beans, onions, and peppers on a plate
5. slice chicken breast into strips and place onto the salad
6. sprinkle cheese on the salad
7. place a serving of guacamole on the salad
use the salsa and ranch as dressing.
I pour the salsa on the salad and dip my fork in the ranch to limit the amount of dressing I use.
