Introduction
Ken's Spaghetti Ken's SpaghettiNumber of Servings: 20
Ingredients
-
2 medium raw sweet white onions (chopped)
1 tbsp minced garlic
8 oz fresh mushrooms (sliced)
2-4 tbsp extra virgin olive oil
6-15oz can tomato sauce (Contadina)
2-4 tbsp chopped sweet basil
2-1 tbsp ground oregano
2-1 tbsp granulated sugar
2 lbs ground beef-lean
2 lbs sweet Italian sausage
Directions
Empty tomato sauce into a 5 quart pan - begin heating on low-med heat. Stir in 4 tbsp basil, 1 tbsp oregano and 1 tbsp granulated sugar. While spiced tomato sauce is heating, saute sliced mushroom in 4 tbsp of olive oil. Once reduced, add entire pan into tomato sauce mixture - stir. In same pan, saute chopped onions and minced garlic in 4 tbsp of olive oil. Once translucent, stir into tomato sauce mixture. Begin browning ground beef mixed with remaining spices (4 tbsp basis, 1 tbsp oregano, 1 tbsp sugar). Drain well (do not rinse - it will wash of the spices added) add to tomato sauce mixture. Brown Italian sausage. While browning, smash/chop up sausage because it will clump. Drain and rinse, add to sauce mixture.
Simmer completed sauce for at least 1 hour. (If you have time 2 hours will mix the flavors together). Add additional spices to preferred taste. The sauce will have a sweet taste - if preferred the sugar can be removed. I add it to reduce the acidity of the sauce.
Cook preferred noodles per the package. Nutrition info does not include noodles.
Should make about 20-1 cup servings. This takes awhile to make so I make extra for freezing.
