Ingredients

3 Skinless Chicken Breasts
15-20 King Prawns (jumbo shrimp)
300g chorizo sausage
1 large yellow onion
4 large sticks celery
2 bell peppers
4 cloves garlic (or 1 tsp garlic powder)
1/2 tsp thyme
1/2 tsp cayenne pepper
Pinch sea salt
dash black pepper
4 bay leaves
2 cups (dry) whole grain rice
1 can diced tomatoes
1 ltr chicken stock/broth
Directions
Season chicken & sausage with cayenne, black pepper & salt. Cook in non-stick pan until meat is browned. Then add the onion, peppers & celery plus the bay leaves, thyme and pinch of salt and pepper.
Cook for about 10 mins until veg is softened. Now add your garlic, tomatoes and hot chicken stock/broth. Bring everything to the boil then turn down to low-medium heat and simmer for 20 mins.
Now add the rice and mix well. Turn heat to medium and simmer for 20 mins until the rice is cooked. Stir occasionally.
Now add your prawns/shrimp and cook for a further 4-5 mins. Give it all a good stir and serve.
