Ingredients

    salsa
    red pepper
    onion
    monterey jack cheese
    whole wheat tortilla

Directions

Saute red pepper and onion until soft. Add salsa and heat thru. Spray baking sheet with nonstick cooking spray. Place 4 tortillas on it. put 1/4 of veggie mixture on each, and 1/4 cup cheese. fold in half and spray lightly with nonstick spray. Bake for 10 minutes at 350. Flip over and bake 8 more minutes until crisp.
