Ingredients

3 boneless, skinless chicken breast halves
1 large egg
1 Tbsp Olive Oil (I used Extra Virgin for nutritional info.)
1 Tbsp Water
1/2 cup bread crumbs
1 Tbsp wheat bran
1/4 tsp dried parsley
1/4 tsp dried oregano
1/4 tsp ground black pepper
1/2 tsp onion powder
1 tsp garlic powder
2 Tbsp grated parmesan cheese
1/2 cup shredded cheddar cheese
Directions
Preheat the oven to 350 degrees.
Whisk the egg, olive oil and water together in a shallow bowl to make an egg wash.
In another shallow dish (I use a pie plate) combine the bread crumbs, spices and cheeses.
Dip the chicken in the egg bath and then into the crumb mixture. (you can dip into the eggs again and back into the crumb mixture if you want a thicker coating. I generally only dip once.)
Place the chicken breasts into a baking dish and place the extra bread crumbs on top of the chicken if desired.
Bake for 30 to 45 minutes (until juices run clear.)
This recipe makes 3 chicken breast halves = 3 servings.
Tip: For crispier bottoms put a thin layer of regular bread crumbs in the baking pan before placing chicken in. These extra crumbs are not in the nutritional info.
