Ingredients

2 zucchini
1 onion chopped
1/2 tomato chopped
1 tbsp sour cream - light
1 tsp salt
1/4 tsp curry powder
1 tsp thyme
1 oz shredded romano cheese
Directions
Preheat oven to 400 degrees
Cut zucchini in half length ways and scoop out the insides to make 4 boats. Next chop onion, tomato, and the insides of the zucchini into small pieces. Saute the onion in a little olive oil and let them brown a little. Add the curry powder and cook for another 30 seconds and then remove from heat and transfer to a bowl.
Add the other ingredients, except for the cheese, to the bowl and mix well. Then scoop mix into your zucchini boats. Sprinkle the tops of the zucchini with the cheese. Place the boats into a lightly greased dish and bake for 20 minutes. Then broil for another 3 - 5 to brown the top.
