Introduction

Number of Servings: 8

Ingredients

    1.5 lbs. yams (sweet potatoes) peeled and sliced.
    .75 lbs ham (preferably smoked or a salty variety, not sweet) cubed
    1 onion
    1.5 cups milk
    1.5 cups mozzarella cheese (Can substitute swiss.)
    .25 cup flour
    .5 tsp basil
    .5 tsp dry mustard
    salt and pepper to taste

Directions

Peel and boil the sweet potatoes until fork-tender. After they're drained and cooled enough to handle, slice them as you would for scalloped potatoes.

Melt the butter in a saucepan. Add the onion; cook until tender to slightly brown. Stir in flour and all seasonings, and cook over low heat for 2 or 3 minutes - until bubbly. Pour the milk in all at once. Stir constantly until the mixture boils; boil for about a minute. Stir in 1 cup of the cheese.

In a greased 9 x 13 x 1 casserole dish, add a layer of ham and of sweetpotatoes. Pour the cheese mixture. Repeat the layers until the top is reached - sprinking with remaining cheese. Bake covered at 350 degrees for 20 minutes, then uncover and cook another 10 minutes or until bubbly-hot.

Serves 8. Goes great with a salad!
