Ingredients

    2 lb. Boneless pork loin roast
    18 oz jar of apricot preserves
    10 1/2 oz can of Campbells's condensed chicken broth
    2 T. dijon mustard
    1 cup of chopped onion.

Directions

Place roast in crock pot. Sprinkle onion over the roast. Mix jar of apricot preserves, can of campbells condensed chicken broth and 2 tablespoons of dijon mustard together well and pour over the roast. Cook on low setting for 8 hours. Makes 8 servings.
