Introduction

I saw this recipe on SP and decided to give it a try since we had several ingredients and also because I've been looking for a good black bean and corn salsa for a while. Number of Servings: 20

Ingredients

    -1 1/2 C fresh chopped tomatoes, drained well
    -3 small - medium cloves of garlic, diced
    -1 C diced onion (I used white, red might be nice, too)
    -3/4 C frozen corn, thawed
    -3 t lime juice (.333 oz), fresh is always best, but I used from a bottle
    -1 diced jalapeno with the seeds (careful when dicing not to touch it with your fingers)
    -1 C drained and rinsed canned black beans


Directions

---Mix all ingredients until well blended. Refrigerate for at least an hour for flavors to blend together.

--Makes about 5 cups or 20 servings of 1/4 C each.

--Enjoy!!
