Ingredients

    2 cups red peppers sliced
    1 cup red onion sliced
    1/2 snow peas
    2 chicken breasts (appx 1 lb) sliced into strips
    2 T soy sauce (use the low salt variety to reduce sodium content)
    1 tsp ginger
    1 cup low fat chicken broth

Directions

Prepare all ingredients as stated
Heat large skillet and spray with cooking spray
Add chicken slices and lightly brown
Add all other ingredients cover and cook until veggies are still a bit crisp and chicken is heated through.
Serve over Brown rice
Makes 3 One Cup servings over !/2 cup brown rice.
