Introduction
A perfect sub for hamburgers. I played with this to final get what I wanted. I also, created a special mayo to top of this burger that I will add to the cookbook later. A perfect sub for hamburgers. Ingredients:
Atlantic Salmon (fish), 16 oz
Kraft Mayo Fat Free Mayonnaise Salad Dressing, 3 tbsp
Green Peppers (bell peppers), 1 cup, chopped
Dill weed 1 tsp
Ground Cayanne pepper 1 tsp
Lemon Juice, 0.5 fl oz
Grey Poupon Dijon Mustard, 1 tsp
Horseradish, 1 tsp
Bread crumbs, dry, grated, plain, .50 cup
Red Ripe Tomatoes, 2 large whole
Salt, 0.50 tsp
Pepper, black, 1 tsp
Mixed Grain Hamburger or Hot Dog Buns, 5 roll
Spinach, fresh, 1 package (10 oz)
Directions
Cut Salmon into small quarter in squares, in food processor chop salmon on pulse setting. Take salmon and place in large mixing bowl with chopped bell peppers, lemon juice, horseradish, mayo, dijon, dill weed, cayanne pepper, salt and pepper. Mix well and chill for 30 minutes.
Prepare your Grill. For this burger I prefer to use mesquit wood on my grill salmon with that great smoke flavor is the best.
When you fire is ready remove mixture from refrigerator and add bread crumbs and shape into 5 patties. Place them on the grill turning once.
Cook for about 5 minutes on each side salmon does not take long to cook. You can cook longer for your desired doneness.
Place salmon patty on bun with baby spinach, slice tomatoes and cheese if you prefer. Also top it off with your favorite dressing or low fat mayo or dijon. I like this with some Sweet Potatoes fries.
