Ingredients

    Salad:
    1 Pound fresh or frozen whole green beans, ends trimmed
    1 can (3.5 c) Dark Red Kidney Beans
    1 can (3.5 c) Garbanzo (Ceci or Chick) Beans
    1 can (3.5 c) Black Beans
    0.25 cup minced fresh Parsely
    Dressing:
    4 T Red Wine Vinegar
    4 T Olive Oil
    0.25 -1 tsp cumin (ground &/or seed)
    Dash salt & pepper to taste


Directions

Steam fresh trimmed green beans over boiling water until tender crisp about 5-6 minutes or microwave frozen green beans.
While steaming green beans, open cans of beans, drain & rinse and transfer to large salad bowl.
Rinse steamed green beans immediately under cold water to preserve color, drain & cool.
Transfer to large salad bowl.
Thin slice red onion into rings and add to beans in large salad bowl.
Cut up fresh parsely and mix into bean & onions.
In a small bowl or jar, combine all the dressing ingredients - vinegar, oil, & spices.
Add dressing to beans & onion mixture. Toss gently.
Serve immediately.

Salad is best at room temperature.

Store leftovers in tight container in refrigerator and re-heat in microwave.

Makes 14 servings, approx 1-cup each.
