Ingredients

One 6 inch corn tortilla
1/2 C. fat free refried beans
1/4 C. salsa verde, or any kind of salsa
1/4 C chopped jalapeno peppers (canned or fresh--adjust the amount to your taste!)
1 poached egg
1/4 C. low fat shredded Mexican blend cheese
Directions
Serving Size: 1
Spray a skillet with non-stick spray and heat the tortilla, flipping it over so that it gets slightly crispy.
Heat the refried beans on the stove, mixing in the salsa and jalapenos.
Poach one egg.
When all ingredients are ready, spread the refried bean mixture on the tortilla, put the poached egg on top of the beans and sprinkle the shredded cheese on top. You may also want to add avocado, more salsa or tomatoes (which aren't included here in the nutrition info). Enjoy!
